“Easy” is really one of my favorite words these days. When I am pulled in 8 thousand directions in a single day, I need some shortcuts and I need an easy button! Consider this your easy button for chocolate chip cookies. It doesn’t get any easier (I mean unless you do the whole slice and bake thing, but who wants that?!). These are the easiest vegan chocolate chip cookies.
Can we talk about how amazing chocolate chip cookies are for a second? I mean for real, I think they can fix anything. A bad day, a good day, a sweet tooth, a sad mood, a good mood… there is NO bad time for chocolate chip cookies. And for all the skeptics out there… YES these are equally as delicious if not BETTER than your regular non-vegan chocolate chip cookies. Ask my hubby, I promise he agrees!

I am a fan of big, chewy cookies, but you can also make smaller (normal) cookies. These are easily made gluten free with certified gluten free oats, and there is plenty of opportunity for more add ins!
- Pecans for a crunch
- Raisins for some chewy sweetness
- Hemp seeds for some more superfoods
- Shredded coconut (because coconut and chocolate are match made in heaven)
- Change out the chocolate chips for some raisins and cinnamon for a perfect oatmeal raisin cookie (or hey, keep the chocolate chips, nobody says you can’t have both!)
- Use chunks of chocolate for a chocolate chunk cookie
- Add 1/2 cup of cocoa powder for a chocolate chocolate chip cookie
- Add walnuts and take out the chocolate chips for a delicious oatmeal walnut cookie
Needless to say this is my go-to recipe for any cookie, you can easily change out the ingredients to make your favorite cookie. It’s like a template for any cookie you want in a cinch!
