Baked Blueberry Oatmeal

I know a lot of ya’ll are stuck at home like, ok now what do I do?? In the middle of this COVID-19 debacle, I think everyone is experimenting in the kitchen a little more, so I’m bringing some more inspo for your breakfast table. This baked blueberry oatmeal is SO simple and super yummy.

I love any breakfast I can throw together in one bowl, and even better when I know it will feed little man for like a week! He loves (and I mean, LOOOOVES) blueberries and he loves oatmeal. So it was an easy one to put together.

Here is what you’ll need:

  • oats (This brand is amazing, and this bag lasts FOREVER)
  • ground flax seeds
  • baking powder
  • salt
  • cinnamon
  • coconut oil
  • almond milk (or other non dairy milk)
  • maple syrup
  • vanilla extract
  • blueberries (fresh or frozen)

All you do is make the flax egg, then throw all of the ingredients in the bowl. I do have an optional step in here to toast the oats. It does give it a little more flavor, makes it little nuttier. But you can totally leave this step our for a time saver.

I wait until the end to put the blueberries on to keep it from turning purple, but if you don’t care then I don’t either!

Options for other add ins? Of course there are!

  • Other berries (like raspberries or blackberries, little man also likes fresh cranberries)
  • Chocolate chips
  • Chopped banans
  • Pecans or other chopped nuts
  • Diced apples
