Sweet potato oat bars

Anybody else looking for recipes they can make using crap they already have? I’ve been trying to get creative to avoid the madness at the grocery store amidst this COVID thing, so frozen veggies and pantry staples have been my muse. Sweet potatos are little man’s favorite (along with blueberries) so I like to have them on hand at all times. These sweet potato oat bars are a great way to make sure of pantry stuff (like oats) as well as sweet potatoes AND frozen veggies. Yep I snuck those in too!

Sweet potatoes are a deliciously healthy starchy vegetable, as well as an underestimated superfood, that everyone should be eating more of! They are full of vitamin A and C, which are both antioxidant vitamins that can help fight off tissue damaging free radicals. They are also rich in B vitamins and vitamin E, potassium and folate. They’re super high in fiber so they help maintain stable blood sugar. They are so versatile and can be added in so many recipes!

Here’s what you’ll need:

  • sweet potatoes
  • cauliflower (I like frozen cauliflower rice)
  • coconut oil
  • almond butter
  • vanilla extract
  • oats
  • flax seed meal
  • chia seeds
  • optional hemp seeds

I’m there are some septics out there asking what the heck am I doing adding cauliflower to breakfast bars… I promise you won’t even know! Adding cauliflower to recipes like this is a great way to add fiber and antioxidants. You can also toss some in smoothies for the same benefits.

Ok back to the recipe. I like to use my blender in this one, makes it super quick. Toss the sweet potatoes, cauliflower, coconut oil, vanilla extract and almond butter in a blender then pour that in a bowl with the dry ingredients. And done!

For the add ins, my favorite is chocolate chips, but you could also go the fruit or nut route. I think pecans would be really good in these. I stuck the chocolate chips on top, but you can also just add them in to the batter and let them get melty and gooey when it cooks.
