Superfood banana oatmeal breakfast cookies

Confession: I make all my kids food. Call me crazy, or boujee (my friend would call it she-she), or call me a snob, but it’s true! I don’t do it to make other moms feel bad (I hate that crap), I do it for a couple reasons. First, I like to be in control of what he’s eating, so I know how much sugar he’s eating. And so I can avoid processed foods as much as possible. Second, I actually enjoy it. I like the challenge of coming up with new things for his snacks and breakfast that he will enjoy and will expose him to new flavors and textures. Which is where these superfood banana oatmeal breakfast cookies came from.

I like to make things that are easy for him to pick up himself so breakfast cookies are usually my go-to for breakfast or snacks. And these have the added bonus of being full of superfoods. Take a look at these:

  • flax seeds (full of omega 3s, fiber, Vitamin B, protein (amino acids), lignans (which help reduce blood pressure, oxidative stress, and inflammation)
  • hemp seeds (full of protein, healthy fats, vitamin E, phosphorus, potassium, magnesium, calcium, iron and zinc)
  • chia seeds (full of fiber (tons of it!), protein, healthy fats, omega 3s, calcium, magnesium, manganese)
  • oats (full of B vitamins, fiber, folate, iron)
  • coconut oil (full of MCTs which are antimicrobial and anti inflammatory)
  • almond butter and almonds (fiber, protein, Vitamin E, magnesium, manganese)

Not only are these superfood banana oatmeal breakfast cookies SUPER DUPER healthy, but they’re the easiest recipe to make, you literally just dump it all in a bowl and mix it up. These do really well in the fridge for a while, so feel free to double this recipe so you can eat off them for a bit longer.

And so many ways to change these up!

  • Toss in blueberries
  • Add chocolate chips
  • Put some more crunch with chopped walnuts or pecans
  • Throw in dried cherries or cranberries
  • Try a flavored almond butter or change up the nut butter
  • Use sunflower seed butter to make it nut free
