No bake coconut balls

I’m all about the no bake snacks… SOOOO easy. And while these do require a microwave or stovetop, it only takes a minute to melt everything together. And they’re so. dang. good. I think they lasted maybe 3 days in our house. These no bake coconut balls are crucial for quick snacking!

Quick baking and quick snacking are essential these days, am I right? While I do love baking, sometimes I don’t have the time to spend hours in the kitchen to bake something special. Because let’s be honest, by the time you find a recipe, get everything together, start assembling, get interrupted at least 10 times by your family, and start the baking process it’s already been HOURS. So this is a nice little solution for the easy sweet snack!

I have to admit, there is a little inspiration behind these no bake coconut balls. One of my favorite childhood snacks were these peanut butter oatmeal balls that my mom had a recipe for. This is is going to make you laugh… Do you remember Arthur? He was the aardvark looking guy with glasses? Well for some reason I had an Arthur recipe box, and this no bake peanut butter balls recipe was the one that always loved to make! I really couldn’t tell you the rest of the recipe but I remember throwing things in a bowl, rolling them into balls and setting them in the fridge.

These no bake coconut balls here are my healthy/fancier version of these. And I only say fancier because it has coconut in it (doesn’t that make it fancy??). I did mention that you would need a microwave or stovetop, so if this constitutes baking for you, sorry for the misnomer! But for me, it’s just a necessary step to get all the ingredients melded together.

All you have to do is put the wet ingredients in a saucepan or microwave safe bowl, warm it up, then put the dry ingredients in, mix, then roll, then DONE. You can keep these in the fridge until you’re ready to eat them or you can just let them sit for a few minutes and they’ll harden up (the coconut oil is crucial for holding them together).

You could totally add chocolate chips, cocoa powder, chopped nuts, or dried fruit in these to change it up. But honestly, they’re so freaking good like they are, I don’t know how they can be any better!
