Lentil Veggie Nuggets

The plant based thing has become somewhat of a trend lately. Have you seen all the “plant based”options t the fast food restaurants? I think it’s safe to say that we’re all looking for more ways to get our veggies in. Am I right? And I think it’s especially true for mamas trying to get their kids to eat veggies! It’s hard out there for a veggie-lovin-mama… But you know I love a challenge. And I am always up for the challenge of adding more veggies to my meals. These lentil veggie nuggets are perfect for a veggie serving or 2! Full of protein and fiber from the lentils, and then toss in a handful of different veggies… and the best part? Your little ones won’t even know!

Here’s what you’ll need for these nuggets:

  • lentils
  • zucchini
  • carrots and peas (or a good ole vegetable medley works!)
  • oat flour
  • panko
  • spices (garlic powder, onion powder, paprika, or other blend you like)



These sneaky little nuggets are delicious AND filling. And best when dipped! 😀 Ketchup is the favorite at our house, but I can see these lentil veggie nuggets being super yummy with honey mustard (or regular mustard if you’re my kid), ranch, or barbecue sauce. Speaking of barbecue sauce, this one here is my go-to store bought, it’s low in sugar and still delicious!

If you’re team texture, you’ll want to choose the right cooking method. Crisping these up in air fryer is the way to go (in my less-than-professional opinion!). But the oven works just as well! You could also pan fry them on the stove for some added crunch.
