Let me break this down for you a little. I like to experiment with grain free recipes. Yes, I cook with regular flour from time to time, but I limit the amount of flour I use to keep the more inflammatory ingredients out of the kitchen. So grain free cooking is where I like to do experimentation… because grain free cooking is definitely an art. Working towards an extremely precarious texture, with a flour that isn’t going to “rise” like a regular flour is a tricky thing! So it takes the right blend of flours to get that texture how you want it. For this recipe, it’s a blend of almond and coconut flour with a touch of tapioca flour to get it to that spongy goodness you’re looking for. (Check out more info on this post about alternatives to regular flour!)

For the vegan part, well, that’s easy. The flax eggs are a must, then the bananas get it moist and rich.

For the chocolate chips, you can go multiple directions. I like to keep the Enjoy Life brand in the pantry as a go-to, but I also like to use Lily’s dark chocolate chips, for a richer chocolate flavor (and less sugar… note the nutrition info below are with the Enjoy life brand. The sugar content drops substantially with the Lily’s brand but just know it will be a less sweet donut!)

And all you need is a little donut baking sheet (like these super cute and affordable ones here) and you’re all set for donuts at home!

I have to say, I have never been a huge fan of donuts. I know, I know, I can sense the eye rolls, but really, they just never got me excited. And never left me feeling greta afterwards, so it was never something I wanted if I had to pick a pastry for breakfast. But these donuts are different; it’s the texture, the lack of greasy goo coming off the typical fried ones, and the quality ingredients that leave me full and satisfied!

And, like all my recipes, these grain free chocolate chip banana donuts with almond maple glaze are baby and hubby approved!
