Coconut Chia Seed Pudding

As you might have already learned about me, I am all about the superfoods and discovering new ways to get these in. Chia seeds are most definitely a well knots super food (more about their super powers below). I have talked about chia seeds so many times before on this blog, and I think the easiest way to get these in is chia pudding. Especially when it is this coconut chia seed pudding.

Chia seed pudding is so simple, it’s literally just throwing some chia seeds and liquid in a bowl. And then of course adding in whatever goodies you want to add in… In this case, you are adding maple syrup, coconut milk, and topping with some Wildway Coconut Cashew Grain Free Granola.

Chia seeds have some pretty amazing super powers. You can find more than 10 grams of fiber and almost 5 grams of protein in just 1 ounce (about 2 tablespoons) of chia seeds… ONE ounce! They’re also a great source of calcium, magnesium, omega 3’s, and iron. Chia seeds can swell 10-12 times their weight when soaked in liquid, so they help fill you up too.

When little man was still gumming everything I discovered all kinds of things that were baby friendly (besides just throwing veggies or fruits in a blender), and he LOVED chia pudding, and still does! I always made it with full at coconut milk to make sure he was getting some good fats (since we don’t do dairy) and it always made for a great snack for him.

While I typically make this with (canned) full fat coconut milk (I like the texture better), you could definitely make it with lite coconut milk. Or if you are a nut free person, try any other type of milk that you drink. Just know that using a thinner milk will change the texture a little, not worse just different!

I have to say the texture of chia seeds can freak me out a bit… like those drinks with chia seeds in them? Yeah, can’t do those. But I like this chia pudding because it is less slimy and then when topped with something great like Wildway Granola, it’s SOOOOO much easier to eat for me.

Other great toppings:

  • fruit, like berries or bananas
  • nuts like walnuts, pecans, or pistachios
  • dried fruit
  • drizzle of almond butter
  • chocolate chips

If you haven’t tried the grain free granolas and snack mixes from Wildway, you are most DEFINITELY missing out. I found their stuff when I was pregnant and had gestational diabetes and had to be careful about what carbs I ate. This stuff was a God-send. It is SO delicious and the flavors are ridiculous, all made with no added sweetness, it’s paleo, vegan and perfect. Only problem… it goes way to fast!
